Harvesting occurs when the grapes reach full ripeness. Syrah and Merlot are harvested in September, while Areni is picked in the latter half of October. The grapes remain intact during the process. Fermentation begins in stainless steel tanks, followed by an extended maceration period. This wine is not aged in oak barrels.
